Pressure Canner Testing

Today, we went to the local co-op to test our pressure canner with our extension agent. The agent tested the canner first by looking through the petcock. Then, she added pressure to the lid to test the gauge. She said that our gauge was great, except that it was off by 2 pounds. The extension agent explained that all we needed to do was add 2 pounds to the poundage that the recipe said. Otherwise, she noted that the canner was in very good condition. We asked her how old she thought that it was, and she guessed that the canner was about 40 years old. We got the pressure canner off of eBay for a very reasonable price. I can't wait to use it!
